How are plant-based meat processed

The most common ingredients in plant-based food include legumes, soybeans or lentils, quinoa, vegetable proteins like peas, coconut oil, and vital wheat gluten, better known as seitan. 

Since these meats mimic animal meat, texture and flavour are two important aspects that they have to get right. They undergo many processes like extrusion and wet texturizers are used to give them the desired texture. While for the flavouring, extensive seasonings and spices, yeast extracts and enhancers like nut-based sauces, mushrooms and coconut oil are used. Although, only a few brands have come close to achieving both the texture and flavour of the original meat.
