In a pan saute all the veggies.
Once veggies are sauted , allow them to cool down before blending. In a jar add the veggies & 1⁄2 - 1 cup water and blend until smooth - the texture should be relatively thick.
In a pan add oil, rai, jeera and hing. Once the seeds start to crackle, add ginger chilli paste and sauté.
Next add chopped capsicum and tofu cubes. Saute for 2-3 mins.
Then add prepared pumpkin puree and all other spices. Mix well and bring it to a boil.
