Prepare fresh cottage cheese: begin by heating full-fat milk in a heavy-bottomed pan until it comes to a boil.

Curdlify the milk: as the milk boils, add lemon juice and turn off the heat. the milk will curdle within seconds.

Drain and rinse: once the curdling is complete and the cheese has separated from the whey, drain the cheese using a cheesecloth. rinse it under running water to remove excess lemon flavor.

Drain excess water: tie the cheese in the cheesecloth and hang it to drain out the excess water. this might take a couple of hours.

Melt dark chocolate: while the cheese is draining, chop the dark chocolate into small pieces. set up a double boiler and gently melt the chocolate. add cocoa powder and vanilla essence to the melted chocolate, mix well, and set aside.
