To prepare the spicy pickle spice mix, heat oil in a kadai or heavy-bottomed pan over medium heat.

Add asafoetida (hing) and fenugreek powder to the hot oil. saut„© them for a few seconds until you can smell the aromatic flavors rising.

Now, add the kashmiri red chilli powder, mustard seeds, cumin seeds, and turmeric powder (excluding salt). mix these ingredients well.

Turn off the heat.

Gradually add the salt to the spice mix and thoroughly combine it.
