How To Cook?

To prepare the lentil spice mix, dry roast the coriander seeds, urad dal, chana dal, red chillies, and asafoetida mentioned in the ingredients table. grind them into a coarse mixture using a hand blender or mixer. set aside.

Heat oil in a kadai or pan over medium heat. add mustard seeds and urad dal. allow them to splutter.

Add asafoetida, dry red chilli, and curry leaves. let them splutter for a few seconds.

Add the sliced ivy gourds to the pan and stir well.

Sprinkle a little water, mix, and cover the pan with a lid. allow the ivy gourds to cook for about 10 minutes until they are tender yet firm.
