Heat vegetable oil in a pan. add chopped garlic cloves, green chilies, and onion. saute for two minutes until the onion turns translucent. now, add chopped tomatoes and green capsicum. stir-fry the vegetables for 4-5 minutes until they become slightly tender.

Add salt, red chili powder, dried fenugreek leaves, and coriander powder to the pan. pour 2-3 tablespoons of water and mix well to combine the spices. allow the spices to cook for 1 minute, enhancing their flavors.

Cut the boiled eggs into halves and add them to the masala in the pan. gently toss and mix to coat the eggs evenly with the spice mixture. cook for an additional 2 minutes to allow the flavors to infuse into the eggs.
