To prepare the spicy water chestnut stir-fry, start by pressure cooking the water chestnuts along with their outer layer. add about 1 cup of water and pressure cook for at least 4 whistles.

Once the pressure cooking is done, peel the skin off the water chestnuts and chop them into small pieces.

Heat a kadai with oil and add mustard seeds. allow them to crackle.

Add curry leaves and asafoetida (hing) to the kadai, and let the curry leaves splutter for a few seconds.

Now, add the cooked water chestnut pieces to the kadai and sprinkle with black pepper powder, turmeric powder, and salt.
