Wash the basil leaves and gently pat them dry. set aside 15g (1/2 oz) of whole leaves. coarsely chop the remaining leaves and set them aside.

In a medium frying pan, heat 1cm (1/2 inch) depth of vegetable oil over medium-high heat. place a plate lined with kitchen paper near the stove. keep a splatter screen or an upturned sieve ready to cover the pan and prevent oil splatters.

Once the oil is hot, carefully add the whole basil leaves to the pan. immediately cover the pan with the splatter screen or sieve. remove the cover as soon as the intense sizzling subsides (within seconds) and give the leaves a quick stir. they will turn crispy very quickly.

Use a slotted spoon to remove the crispy basil leaves from the pan and spread them out on the kitchen paper to drain. once the oil has cooled down, strain it and save it for future use.

In a large frying pan or wok, heat two tablespoons of vegetable oil over medium heat. add the minced garlic and shallots, and stir-fry for about two minutes until the shallots are lightly golden. be careful not to burn them.
