In a mixing bowl, combine the thin bitter gourd strips with the peels, add 1/2 teaspoon of salt, and mix well. allow it to rest for about 20 minutes.

Heat a heavy-bottomed pan over medium heat and add mustard oil.

Once the mustard oil begins to smoke, reduce the heat and add fennel seeds. let them sizzle.

Add the marinated bitter gourd peels and slices to the pan, and gently mix them with the spices.
