In a deep-bottomed pan, bring 4 cups of water to a boil over medium-high heat. add 1 teaspoon of salt and the chopped potatoes. boil the potatoes for about 10 minutes until they become tender.

Check the potatoes with a knife. once they are done, remove them from the water.

Add carrots, green beans, and cauliflower to the boiling water. let the vegetables boil for a minute.

Leave the vegetables in the hot water for around 2 minutes until they become crisp-tender. strain the boiled veggies and set them aside.

In a cup, mix together yogurt, tomato puree, coriander powder, garam masala, chili powder, black pepper, and salt. also, add crushed green cardamom seeds to the mixture. set aside.
