How To Cook?

Cut the bitter melon lengthwise, remove the top and bottom caps, and scoop out the seeds. save half of the seeds and discard the other half. slice the bitter melon into thick diagonal pieces.

In a pot, boil the bitter melon with 2 cups of water, 1/2 teaspoon of salt, and 1/2 teaspoon of turmeric over medium-high heat. cook for about 8 minutes until the bitter melon is soft and tender but not mushy.

Drain the water and wash the boiled bitter melon pieces 2-3 times, changing the water each time. squeeze out excess water from the bitter melon.

Heat oil in a frying pan over medium-high heat. once the oil is moderately hot, add cumin seeds. as the cumin seeds crackle, add the bitter melon slices and sprinkle the remaining 1 teaspoon of salt.

Stir-fry the bitter melon for about 4 minutes over medium heat.
