Begin by slicing off the tops of the bell peppers and removing the seeds and membranes. lightly brush the outsides with extra virgin olive oil and place them in a baking dish.

In a pan, heat a teaspoon of olive oil and saute the finely chopped onion until translucent. add the minced garlic and continue to saute until fragrant.

In a bowl, combine the saute onion and garlic mixture with the shredded mozzarella cheese, mixed fresh herbs (thyme, tarragon, oregano), and black pepper powder.

Stuff each bell pepper with the cheese and herb mixture.
