How To Cook?

Fill a large pot with enough water to cook the spaghetti. bring it to a boil.

In a large saute pan over medium heat, add the pancetta, avocado oil, and garlic. cook until the pancetta starts to sizzle and the fat renders out (about 3-4 minutes). then, add the black pepper and curry leaves. cook, stirring often, until the pancetta becomes crispy. push the mixture to one side of the pan to prevent overcooking, and keep it warm over very low heat.

In a medium bowl, whisk together the egg yolks, whole eggs, and cheese until well combined. set aside.

Season the boiling water with salt, similar to the taste of the ocean. add the spaghetti and cook until it reaches al dente texture, approximately 10 minutes. reserve 1 cup of pasta water, then drain the pasta.

Gradually pour about 1/4 cup of the reserved pasta water into the egg mixture, whisking thoroughly until well combined.
