Start by making the caramel. in a small, heavy-based pan, combine the granulated sugar and water. heat gently, stirring occasionally, until the sugar has completely melted. increase the heat and cook the mixture without stirring until it transforms into a dark golden caramel. add the butter, being cautious of any spluttering, and simmer for 8 minutes. remove the pan from the heat and pour the caramel into a greased 20cm cake tin, ensuring the base is evenly coated. allow it to cool and set.

Peel the bananas and slice them. arrange the banana slices in overlapping circles on top of the set caramel. sprinkle the pink peppercorns over the bananas. roll out the puff pastry to approximately 3mm thickness and cut out a 23cm round. cover the bananas with the pastry, tucking the edges down inside the tin. bake the tart in a preheated oven at 190ÔøΩc (gas mark 5) for around 15 minutes, or until the pastry has puffed up and turned golden. remove the tart from the oven and invert it onto a plate so that the bananas are on top. alternatively, you can make individual tarts using smaller discs of pastry and tins, as shown in the picture. the larger tart is easier to make and share at home.

For the iced double cream, combine the caster sugar and milk powder in a heavy-based saucepan. add the whole milk and double cream, then bring the mixture to a boil. pour the mixture into a blender or food processor and quickly blend until smooth. strain the mixture into an ice cream maker, and when it is nearly frozen, fold in the black cardamom pods and continue churning. transfer the mixture to the freezer.

Serve the banana tarte tatin hot with the black cardamom iced double cream or your preferred choice of ice cream.
