To prepare the fenugreek masoor dal, start by washing and soaking the masoor dal in 3 cups of water for at least 30 minutes.

While the dal is soaking, clean and pat dry the fenugreek leaves (methi).

Finely chop the fenugreek leaves and set them aside.

Heat a teaspoon of oil in a wok or kadai and add the chopped fenugreek leaves. sprinkle some salt, cover the pan, and cook the leaves until they become soft and tender. this process takes around 2 to 3 minutes. set aside the cooked fenugreek leaves.

In the next step, cook the masoor dal with spices.
