How To Cook?

Wash the whole moong thoroughly and soak it in water for at least 4 hours or overnight. drain the water and set it aside.

Heat oil in a pan and add hing (asafoetida) and curry leaves. saute for a few seconds.

Add the soaked and drained whole moong to the pan. stir well to combine with the tempering.

Add salt and enough water to cover the moong. cover the pan and let it cook on medium heat until the moong becomes tender. this may take around 15-20 minutes.

Meanwhile, blanch the spinach leaves in boiling water for a minute. drain and chop the blanched spinach.
