To prepare tangy orange peel masala, peel the oranges and gently scrape off the white region from the orange peels using a spoon to reduce bitterness.

Finely chop the orange peels and set them aside.

Soak tamarind in water, squeeze out the tamarind water, and keep it aside.

In a heavy-bottomed pan, heat oil and add mustard seeds, urad dal, cumin seeds, and fenugreek seeds. let them splutter.

Add curry leaves, whole red chilli, green chilli, asafoetida, and turmeric powder. mix well.
