To prepare the spicy ridge gourd peel chutney, heat a teaspoon of gingelly oil in a heavy-bottomed pan. add the peeled and chopped ridge gourd along with a pinch of salt. saute until the peels are soft and tender.

Turn off the heat and allow the cooked ridge gourd peels to cool.

In a separate small pan, dry roast the fenugreek seeds, red chillies, and urad dal until they emit a fragrant aroma and turn slightly brown.

Grind the roasted ingredients along with the cooked ridge gourd peels, tamarind, and curry leaves into a smooth paste.

Adjust the salt according to your taste preference.
