To prepare the chayote-coriander chutney, start by cleaning, peeling, and dicing the chayote squash. also, gather the rest of the ingredients.

Heat oil in a saucepan and add urad dal and chana dal. mix them well and let them turn golden brown.

Once the dals are golden, add red chillies and saut„© them for a short while.

Add the diced chayote squash and saut„© until they are cooked but still firm.

Mix in the tamarind pulp with the chayote and continue to saut„©.
