To prepare the nepalese style masala dhal bhat, start by boiling the yellow moong split in water with turmeric powder and salt until it turns soft and mushy. use a pressure cooker and cook for about 4 whistles.

While the dal is boiling, grind all the whole spices (cinnamon, cardamom, cloves, red chillies, black pepper, and cumin seeds) in a mixer or spice grinder until you get a smooth powder. you can add a little water if needed to help with the grinding.

In a kadai or pan, heat some oil and add the chopped onions. saute the onions until they become translucent and lightly browned.

Now, add the ground masala powder and cook for a few minutes to enhance the flavors.

Once the dal is boiled and ready, add it to the kadai along with some more salt to taste. stir well to combine all the ingredients.
