To begin making the chettinad style pakora curry, soak chana dal along with red chillies in water for 20 minutes. then, grind it with fennel seeds and salt to a coarse paste using a mixer grinder. add very little water while grinding.

Heat oil in a pan for frying the pakoras. drop spoonfuls of the pakoda mix into the oil and fry until they turn golden brown on medium heat. remove them onto a kitchen towel and set aside.

Prepare the remaining pakodas with the remaining batter in the same way and keep them aside.

Grind the coconut, poppy seeds, fennel seeds, and cashew nuts to a smooth paste using a mixer grinder. set aside.

Heat oil in a pan and add bay leaf, cinnamon stick, and cardamom. let them release their aroma into the oil.
