To begin making chettinad egg masala, hard boil the eggs in boiling water for about 12 minutes. once cooled, remove the shells and set aside.

Dry roast the coriander seeds, garlic, ginger, fresh coconut, fennel seeds, black pepper, poppy seeds, cumin seeds, and red chilli in a shallow fry pan until the coconut starts to turn brown. turn off the heat and allow the masala to cool down.

Grind the roasted masala into a smooth paste in a mixer grinder, adding a little water, and keep it aside.

Heat oil in a kadai over medium flame. add the cinnamon stick and cloves to let their aroma infuse into the oil.

Now, add the sliced onions and saute until they turn translucent.
