To begin making the mixed lentil vegetable pakora, dry roast the fennel seeds in a preheated pan until they release a delightful aroma. allow them to cool and then coarsely crush them using a mortar and pestle. set aside.

Rinse the chana dal and yellow moong split under running water. soak them in water for about 2 to 3 hours.

Drain the soaked dals and transfer them to a mixer grinder. add a small amount of water and blend to create a coarse batter.

Pour the dal batter into a mixing bowl.

Finely chop the green chillies, ginger, carrot, and onion. add them to the dal batter.
