In a mixing bowl, combine the wheat flour, 2 tablespoons of sunflower oil, carom seeds, lemon juice, and a pinch of salt. mix well.

Gradually add water and knead the mixture into a smooth and firm dough. cover the dough with a damp cloth and let it rest for 15-20 minutes.

In the meantime, prepare the vegetable filling. heat 1 tablespoon of sunflower oil in a pan over medium heat.

Add mustard seeds and coriander seeds to the oil. once they start spluttering, add finely chopped onions, curry leaves, and green chillies. saute until the onions turn golden brown.

Add grated ginger, peas, and diced carrots to the pan. cook for a few minutes until the vegetables become tender.
