To prepare the steamed gujarati mixed vegetable delight (no onion no garlic), gather all the required ingredients and begin by making the muthiya.

For the muthiya, combine besan, fenugreek leaves, red chilli powder, turmeric powder, asafoetida, sugar, salt, and cooking soda in a bowl. add enough water to form a stiff dough.

Shape the dough into small round dumplings (muthiyas) and steam them in a preheated steamer for 10-15 minutes on medium-low heat or until they are fully cooked. set them aside.

In a large bowl, mix together coriander leaves, green chillies, grated fresh coconut, red chilli powder, turmeric powder, coriander powder, garam masala, salt, and sugar to form a dry masala paste. add a little water to bind the masala.

Stuff the eggplants with the dry masala paste and rub the same masala on the other vegetables, excluding cabbage.
