How To Cook?

Heat olive oil in a large skillet over medium heat. add the onion and garlic, and cook until the onion turns golden.

Add zucchini, mushrooms, red bell pepper, spinach, and tomatoes to the skillet. mix well and cook for about 3 minutes.

Add italian seasoning, balsamic vinegar, salt, red pepper flakes, black pepper, and roasted red pepper sauce. stir well to combine.

Continue cooking until the mushrooms and zucchini have slightly softened. the zucchini should be cooked to al dente texture.

Stir in the sun-dried tomatoes and walnuts. cook for an additional 3-4 minutes.
