To prepare the saffron flavored shrikhand, take the yogurt in a cloth sieve or a fine-holed sieve placed over a large container. let it sit in the refrigerator for 5-6 hours or overnight to drain out the excess water from the yogurt.

Once the yogurt is well-drained and becomes thick and creamy, remove it from the sieve and discard the collected whey.

While the yogurt is still in the sieve, rub the saffron strands into it using your fingertips to infuse the beautiful color and flavor of saffron into the yogurt.

Add caster sugar to the saffron-infused yogurt and briskly mix the mixture with a large flat spoon, ensuring all the ingredients blend well and the sugar dissolves completely.

Stir in the cardamom powder and chopped pistachio nuts into the yogurt mixture and whisk it until everything is well combined.
