To prepare the spicy sprouted moth salad, heat 2 tablespoons of oil in a flat skillet. add mustard seeds and carom seeds, then sprinkle a pinch of asafoetida (hing).

Add the sprouted moth beans (matki) and horse gram (kulith) to the skillet. also, add red chilli powder and salt. saute the ingredients until well combined.

Pour in about 1/2 cup of water, reduce the heat to simmer, cover the skillet with a lid, and let the sprouts cook.

Stir the sprouts occasionally to ensure they don't stick to the bottom of the skillet.

Once the sprouts are tender, drizzle some fresh lemon juice over them and mix well.
