To prepare the tangy green amla relish, start by washing the indian gooseberries (amla) thoroughly under running water.

Place the washed gooseberries in a pressure cooker, add water, and boil them until they become soft or until the cooker releases 2 whistles.

Once the gooseberries are cooled, remove their seeds.

Blend the boiled gooseberries along with green chillies, a pinch of asafoetida, and pink salt until you achieve a smooth consistency.

Heat olive oil in a pan for tempering, add mustard seeds, and let them crackle.
