To make spicy achari baingan bharta, start by dry-roasting the spices given for achari masala in a pan, excluding the mango powder.

Once roasted, transfer the grated spices to a mixer grinder, add mango powder, and grind them into a fine mixture.

Apply a thin layer of oil on the brinjal and roast it along with onions and tomatoes in a baking tray at 200 degrees celsius for about 30 minutes.

Allow the roasted vegetables to cool, then peel the skin off the brinjal and mash it.

Similarly, remove the skin of the onion, finely chop it, and peel the tomatoes to remove the seeds before mashing them as well.
