To prepare the achari vegetable paratha roll, add salt and water to the wheat flour and knead it into a smooth dough. add 1 or 2 teaspoons of oil and knead again. keep the dough aside.

For the filling, heat oil in a pan and add mustard seeds. let them crackle.

Add the chopped pumpkin, green peas, and potato cubes to the pan. mix well.

Sprinkle turmeric powder, red chilli powder, garam masala, asafoetida, and salt according to taste. stir everything together and cook on low flame for 8-10 minutes.

After 8-10 minutes, switch off the heat and ensure the filling is mixed well.
