To make the caramelized mishti doi, heat a heavy-bottomed pan over medium heat.

Add milk to the pan and warm it.

Set aside about one-third of the jaggery and add the remaining jaggery to the milk.

Allow the jaggery to dissolve while the milk comes to a boil.

Reduce the heat and let the milk simmer until it reduces by half.
