To begin making the caramelized onion and saffron mutton biryani, make a paste of ginger, garlic, and green chillies in a mixer.

In a mixing bowl, add washed mutton, greek yogurt, 1 tablespoon of the ginger-garlic-chilli paste, red chilli powder, turmeric powder, garam masala, and salt to taste. marinate the mutton for at least 4 hours in the refrigerator.

In a preheated pan, add oil and sliced onions. saute on low to medium heat until the onions caramelize and turn golden brown. set aside half of the caramelized onions for the biryani masala and keep the other half for garnishing.

In a saucepan, add 4 cups of water, bay leaves, cardamom pods, cinnamon stick, cloves, salt, and washed basmati rice. boil the rice for 3 to 4 minutes until it is 3/4th cooked. drain the water and mix a tablespoon of ghee into the rice. set aside.

Dissolve a pinch of saffron in warm milk to make saffron milk.
