How To Cook?

Begin by chopping the eggplant into bite-sized pieces and marinating them with 1 teaspoon of turmeric powder. set aside.

In a grinder, make a smooth powder by grinding the poppy seeds and yellow mustard seeds. keep this mustard mixture aside.

Heat mustard oil in a kadai and add the marinated eggplant. roast the eggplant until it softens. you can sprinkle some water and salt, cover, and cook to speed up the cooking process.

Once the eggplant is cooked, remove it from the kadai. add a little more oil to the same kadai and saute the chopped ginger until it softens.

Now, add the green chilli and the saute eggplant to the kadai.
