How To Cook?

Heat vegetable oil in a pan and add mustard seeds and curry leaves. let them crackle.

Add finely chopped onions, minced garlic, and diced tomatoes. saute for a minute until the onions turn translucent.

Add the eggplant pieces and saute for 2 minutes, allowing them to absorb the flavors.

Sprinkle turmeric powder, red chili powder, coriander powder, and cumin powder. mix well to coat the eggplant with the spices.

Add tamarind pulp, water, salt, and sugar. simmer the mixture for 5 to 6 minutes until the eggplant is cooked and the flavors blend together.
