How To Cook?

To prepare the spicy dum baingan (eggplant) curry, first, grind all the masala ingredients mentioned in the list (green cardamom, cinnamon stick, black pepper powder, cloves, bay leaf, cumin seeds, dried red chilies, onion, ginger, and garlic) into a coarse paste by adding some water.

Heat a pan with oil, add the eggplants (brinjals) that are slit and saut„© them for about 10 minutes.

Sprinkle some salt over the eggplants and cook them covered so that they get cooked faster.

Once the eggplants become soft and turn dark brown, they are cooked. remove them from the pan and keep them aside while you prepare the gravy.

In the same pan, add a little more oil and add the ground masala paste. cook the gravy until it thickens.
