Rinse the brinjals, remove the stem, and cut them into bite-sized pieces. soak them in water to prevent browning.

Finely chop the onions and tomatoes separately and set aside.

Heat mustard oil in a pan until it reaches its smoking point. allow it to cool slightly.

In the same pan, add cumin seeds, cinnamon, and green cardamom. let them sizzle and release their aroma.
