How To Cook?

In a saucepan, pour the heavy cream and sugar together and heat it over medium heat. stir continuously to dissolve the sugar until the mixture is warm, but avoid bringing it to a boil.

Remove the saucepan from the heat and add the lemon juice, ice wine, and lemon zest. mix well to combine all the flavors.

In a separate small bowl, sprinkle the gelatin over a little cold water (about 2-3 tablespoons) and let it sit for a minute or two to bloom.

Gently warm the bloomed gelatin in the microwave or by placing the bowl in a pan of hot water until it is completely dissolved.

Add the dissolved gelatin to the cream mixture and stir until it is fully incorporated.
