To prepare the popped amaranth kheer, start by popping the amaranth seeds.

Heat a kadai or skillet over low heat and add 2/3 tablespoons of amaranth seeds at a time.

The seeds will start popping almost immediately. once they pop, remove the popped seeds on a plate. repeat this process until all the amaranth seeds are popped.

In a small bowl, add saffron strands to 2 tablespoons of warm milk and let it soak for 10 minutes.

In a heavy-bottomed pan, bring the milk to a near-boil.
