To begin making spiced beans matki bhaji, pressure cook the sprouted moth beans with 2 cups of water for 4 to 5 whistles. allow the pressure to release naturally.

Remove the cooked moth beans from the pressure cooker and set them aside.

In the same pressure cooker, add the french beans, sprinkle some salt, and pour 2 tablespoons of water. pressure cook for 2 whistles and then turn off the heat. immediately release the pressure to preserve the bright green color of the beans. set the cooked beans aside.

Heat ghee in a pan over medium heat. add the mustard seeds and cumin seeds. allow them to crackle.

Add the asafoetida, curry leaves, turmeric powder, goda masala powder, amchur powder, and red chili powder. saute for a few seconds.
