To begin making vegetable maize khichdi, wash the rice and corn meal (maize daliya) together under running water. soak them in water for 10-15 minutes and then drain.

Heat ghee in a pressure cooker over medium heat. add the panch phoran and allow it to crackle.

Add the chopped green chilli, ginger paste, cardamom pods, and bay leaves. saute for a minute or until the raw smell of ginger disappears.

Add the diced potato, chopped carrot, and french beans. saute the vegetables for 2-3 minutes.

Stir in the soaked rice and corn meal into the pressure cooker along with turmeric powder, red chilli powder, and garam masala. mix everything well.
