To start making kiwi-infused sondesh delight, pour the milk into a saucepan and bring it to a boil.

Remove the saucepan from the heat and strain the curdled milk using a muslin cloth to separate the milk solids from the whey.

Rinse the milk solids (chena) under running water to remove any lemony sourness. drain away the whey completely.

Knead the chena well for at least 10 minutes to ensure a smooth texture.
