In a bowl, combine the grated potatoes, rajgira flour, cumin seeds, coriander leaves, ginger-green chilli paste, peanuts, and rock salt. mix well until everything is evenly incorporated. if needed, add a quarter cup of water to achieve a dough-like consistency.

Divide the dough into eight equal portions. take one portion and shape it into a roundel, forming the thalipeeth.

Heat a non-stick tawa and add ghee. place the thalipeeth on the tawa and cook on medium heat. flip it occasionally to ensure both sides turn golden brown and crisp.

Once cooked, serve the modified rajgira thalipeeth hot.
