To prepare the spicy tangy prawn delight (prawn balchao), start by cleaning the prawns in a large bowl under running water. drain the water and add a pinch of salt and turmeric powder. mix well and set aside for a few minutes. this step helps remove the typical seafood odor from the prawns.

Dry roast the dried red chillies, black pepper, cumin seeds, mustard seeds, cloves, and cinnamon in a wok until aromatic. grind the roasted spices along with ginger, garlic, and vinegar to make a smooth paste.

In another wok or kadhai, heat some oil and add chopped onions. cook the onions until they turn golden brown.

Add the chopped tomatoes and curry leaves to the wok and cook until the tomatoes become mushy and the mixture releases oil from the sides.

Now, add the ground spice paste to the wok and cook until the raw smell disappears.
