To prepare the spicy red mutton curry, soak the red chillies in water for about 30 minutes.

In a heavy bottomed pan, add water and the soaked red chillies along with cumin seeds, black cardamoms, green cardamoms, cinnamon stick, cloves, and bay leaf.

Boil the spices and chillies until the red chillies become soft.

Allow the mixture to cool down a bit, then grind the spices into a fine paste using a mixer grinder.

In a large mixing bowl, combine the boneless mutton, yogurt, cumin powder, coriander powder, turmeric powder, one tablespoon of ginger-garlic paste, and the ground red chilli paste.
