In a deep non-stick pan, boil 5 cups of whole buffalo milk on low heat until it reduces and thickens.

In another deep non-stick pan, boil 1 liter of whole buffalo milk. turn off the heat and add lemon juice. stir until the milk curdles.

Strain the curdled milk through a muslin cloth placed over a strainer. immediately immerse the muslin cloth in ice-cold water to remove excess water.

Transfer the strained chhana onto a plate and mash it with your hands.

Add sugar and cardamom powder to the reduced milk. mix well and continue cooking until the sugar melts. add pistachio nuts and almonds. mix again and turn off the heat.
