How To Cook?

Heat the olive oil in a large pan over medium heat. add the sliced leek and minced garlic to the pan. saute until the leek becomes soft and translucent.

Add the barley to the pan and stir it for a couple of minutes until it is well coated with the oil and combined with the leek and garlic.

In a separate pot, prepare the vegetable broth according to the instructions on the package. once ready, pour the broth into the pan with the barley, leek, and garlic mixture. stir well.

Sprinkle in the fresh sage and thyme leaves. reduce the heat to low and let the barley simmer for about 30-35 minutes, or until it becomes tender and absorbs most of the broth. stir occasionally to prevent sticking.

While the barley cooks, halve the cherry tomatoes and roughly chop the spinach.
