For kollu vada (horse gram fritters):

Start by soaking the horse gram in warm water for at least two hours or overnight. drain the soaked horse gram.

In a mixer grinder, combine the soaked horse gram, green chilies, ginger, and curry leaves. grind to a coarse batter.

Transfer the batter to a mixing bowl and add finely chopped onions, fennel seeds, and salt. mix well, adjusting salt and spices to taste.

Heat a kuzhi paniyaram pan over medium heat and add a teaspoon of oil into each cavity.
