To prepare the leftover medu vada upma, start by breaking the medu vadas into crumbs using your hands. if you don't have leftover vadas, you can make them by following the traditional medu vada recipe.

Heat a wok or kadhai over medium flame and add oil. once the oil is hot, add a pinch of asafoetida, mustard seeds, chana dal, and red chili. saute them well.

Add finely chopped ginger, green chilies, and onion to the kadhai. let them fry for a minute until the onions turn translucent.

Season the mixture with salt and turmeric, and continue cooking until the onions are well cooked.

Toss in the curry leaves and cook for another minute.
