Heat oil in a kadhai or pan and add 1 teaspoon of mustard seeds, urad dal, cumin seeds, and a few curry leaves. allow them to splutter.

Add ginger, green chilies, and onion. saute well until the onions turn translucent.

Furthermore, add all the vegetables and 1/2 teaspoon of salt. stir-fry for a few minutes.

Add 2 tablespoons of water, cover the pan, and simmer for 5 minutes to cook the vegetables slightly.

Now, add 1 cup of water and bring it to a boil.
